I had some spinach that was desperate to be used. I love quiche, so that is what we decided on.
The crust was packaged, so very easy to assemble.

Unbaked crust fit in a pie plate
Cheese of choice, shredded( I used cheddar
Vegetables of choice ( I used spinach and onion
Precooked meat of choice ( I used precooked sausage
6 eggs beaten with a little milk
Preheat the oven to 375 degrees. Place cheese, vegetables, and precooked meat into the fitted crust. Whisk eggs with milk and pour over top. Bake for one hour. Salt and pepper, to taste.
1 pound ground beef, browned 1/4 cup white rice, rinsed 1/2 large onion,diced 1/2 green bell pepper, diced 2 T dried oregano 2 T ground cumin 1 T chili powder 2 beef bouillon cube with 2 cups water 1 can petite diced tomatoes, undrained 1 can pinto beans , undrained fresh-squeezed lime juice to taste
Bring all ingredients to boil in a Dutch oven. Cover and simmer for 20 minutes, until rice is tender.
Instructions Preheat your waffle iron. In a large bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl, beat the eggs. Add the milk and butter. Pour the wet ingredients into the dry ingredients. Stir until just combined. Some lumps are okay.
Pour the batter into the preheated waffle iron, spreading it evenly. Cook according to the waffle iron’s instructions, usually about 3-5 minutes, until golden brown and crisp.
Serve the waffles warm with your favorite syrup and toppings.
First Strawberry Rhubarb Pie of the season. The deer began attacking my Rhubarb, so I had to place a cage over it. I went on and harvested the damaged stalks and made my first 2025 pie.
Ingredients:
Unbaked double pie crust 1 cup sliced strawberries 1 cup diced rhubarb 3/4 cup sugar 1 teaspoon cinnamon 2 tablespoons butter
Preheat the oven to 375 degrees.
Place one unbaked crust in the bottom of the pie plate.
Spread out your strawberry, rhubarb, sugar, cinnamon, inside the crust. Dollop the butter over the fruit, and then fit your top crust over top. Poke the crust to keep down air pockets.
Bake for one hour then place on a rack to cool, before serving.
1 can Mackerel, de-boned and skin removed
1 green onion chopped
15 saltine crackers, crushed fine
1 egg
1 teaspoon lemon juice
1/4 teaspoon salt
