Greener Pasture

The time has come to move on to a greener pasture.
It has been a lovely experience. Really. I cherish my friends and fellow bloggers.
This blog has been good to me and my amateur ways. I can't help but ponder all
the beautiful memories we shared here. However, I have been longing for this move.

Morning Chats With The Wise One

I love my early morning chats with Edwin. After cuddling all night I woke up to a severe headache. Edwin quickly fetched me some acetaminophen from the medicine cupboard to relive the pressure. While listening to him do his morning routine I tried to fall back to sleep. My thoughts wandered.

"Love, Do you think socks is pregnant?"
Edwin:"Yeah."
Beth: "She should have had kittens by now.
Edwin: "Maybe she is just fat"
Beth: "But she does have "boobs".
Edwin: "Well, you have boobs. All women have boobs."
Problem solved!

Still trying to fall asleep my mind wandered further...

"Love, How do you think the best way to develop my photography would be?"
The wise one: "Start by reading your camera manual, that will teach you a lot. Then, you can take naked photos of me and you will be an expert in no time." (Laughing at himself)

Now I was really awake and head still pounding. Edwin dressed for work as we conversed on many such topics. I was telling him about funny Mormon business ideas. To which he replied, "Lots of people try to make money off of Mormon's... Like the cafeteria at the temple. It cost me 11 bucks to eat dinner last night. Now that is a profitable company!" With a kiss on the cheek he was off, feeling confidant and wise. Till we meet again my love. XOXO

Kendra's Surprise Fiesta


March 11, 2011 we celebrated Kendra's 11th Birthday with a surprise party at her and dad's favorite restaurant, Eva's. Every time we have dinner at Eva's Kendra walks past the large banquet room and asks if we could have a party there sometime. I don't know where she gets it from :)



Since Kendra makes herself very aware of everything going on in everyones schedules I knew a surprise party would be no easy feat. Knowing Kendra regularly checks my email and texts I assigned Ed to reservations and invites assuring our surprise would actually be a surprise. While she was at school my mother and I decorated the banquet room Fiesta style.





When Kendra got home from school, with her two best girlfriends in tow, I asked her where she would like to go to dinner. She said with a slight teen attitude, "Eva's!"
Thank goodness!




She was Surprised!




Her favorite aunt was probably the best surprise!

For as long as I can remember my dad likes to embarrass us in public. I guess somethings never change!


By the end of the night, the kids were strung out on sugar, soda, candy, cake and excitement, Kendra had the party she always envisioned in the Eva's banquet room, the place was TRASHED and I got to leave! Perfect Party.

Healthy Zucchini Bread


Healthy Low-Fat Banana Zucchini Bread




One great thing about living in the boonies is the local, fresh farmers markets! King and I are regulars and can't get enough of their goodness. I love picking up the fruits and vegetables and just smelling them. They actually have a smell! However, there is something to be said about the selection, "limited." Right now there are plenty of oranges, grapefruit, pecans, eggplant, tomatoes, peppers, and zucchini! I have to get very creative so that we don't get tired of the same things :) I love making bread to go along with soups and salads. I found this recipe online and cleaned it up a bit. Hope your family enjoys it as much as mine does :)

2 cups freshly ground flour (wheat, spelt, kamut, rye...)
1 cup rolled oats
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 1/2 tsp. cinnamon
1/4 tsp. allspice
1/4 tsp. nutmeg
1 tsp. salt
4 eggs
3/4 cup sugar
1/4 cup oil
1/2 cup applesauce
2 ripe bananas, mashed
1 tsp. vanilla
2 cups shredded zucchini
1 cup raisins or walnuts

Beat eggs with sugar, oil, applesauce, mashed banana and vanilla. Mix in dry ingredients. Fold in zucchini and nuts/raisins. Pour into 2 greased bread pans.

Bake at 350* for 40-45 minutes or until knife comes out clean.

Cowboy Days


Introducing the cutest muttin bustin cowboy's in town, Kingston and his loyal sidekick Canon!
Since King comes from a long line of cowboy's, rancher's, National Barrel Racing Champions, and Rodeo Queens, I guess you could say it's in his blood! We knew from the time he was coming to our family that he was a cowboy. We decorated his nursery with old pictures of his cowboy Grandpa's, Rodeo Trophies, Belt buckles, Ribbons, and special keepsakes given to him from his ancestors. Hanging above his round corral crib is a 42" canvas painting of a stampede! He even learned to crawl on his genuine cowhide rug.






Our local city put on a Cowboy Day's Rodeo. Along with the typical barrel racing there was a Saddle Bronc Competition, Chuck Wagon cookout, carnival, dance, and team competitions in stray gathering, wild cow milking, and calf branding just like King's Papa's used to do. It was a lot of fun!



Kingston's favorite was the Saddle Bronc Riding!



"Hold tight with a leather fist. Watch out when he starts to twist!"

To Dad From Kaili


Every year at the kids school they have a spirit week. One day they are supposed to wear something to represent their favorite sports team. Kaili was asking her dad what she should wear. She said "I know! I can wear my leotard for Gym!" Ed said, "That is a great sport, but it is a little too cold for your leotard, but I do have something very special you can wear." Ed went to his closet and brought back his high school football jersey. He told Kaili how he had worn it when he played football in high school. Kaili looked at it and said ,"Dad, look how short it is, that was NOT modest!" Ed and I laughed :)



After school she returned the jersey to her dad's counter with a note printed on her favorite cupcake stationary taped to the mirror. I love the special bond between a dad and his little girl!

Lamont Family Vacation- Mt. Timpanogos

This was the first annual Lamont Family vacation (as adults) to Utah for my cousin Patrick's wedding. The only one missing was Katie... Sniff, Sniff :( Whenever we get together we have lots of fun! We liked to laugh about all of our vacations growing up and the infamous homemade trailer that we pulled behind the Aerostar. One trip we fondly remember was to Colorado in the back of my dads truck with a shell and a long pipe hooked up to the AC. GHETTO! So when dad asked us if we wanted to take a family vacation, we agreed as long as we didn't have to ride in the back of the truck ;)

We had so much fun and laughed so hard our stomach's continually hurt! Grandma was usually the brunt of the jokes and she laughs even harder than we do!

One night we snook across the hall to Mom and Dad's room while Grandma was in the bathroom. My brother prank called our room and said, "This is the front desk and I need to speak to Bethany IMMEDIATELY!" She set the phone down and while we were dying watching her through the peep hole, she flew out the door and tore down the hall frantically looking for us! It was hilarious you see because Granny is a hypochondriac anyway, so this really had her going!

Granny is also getting very forgetful and in her own words "Loosing my marbles!" She kept rummaging around the room looking for her clothes because she kept forgetting that she only brought one pair of pants and five bra's! She would say," I just can't figure out why I only brought one pair of pants?" I said "Well, apparently your boobs get way dirtier than your legs!" I crack myself up :)

Cammi: You need some cream.
Bethany: Vaseline works really good.
Granny : "That's What Grandpa Said!"
Bethany: WHA!
Cammi: Grandma, are you telling dirty jokes?
Granny: It's not dirty!
Bethany: I don't get it?
Grandma: Well... Vaseline is a lubricant RIGHT...?
Bethany: I guess it could be
Grandma: Do you need me to draw you a picture?
Cammi: No thank you
Granny: You Can't fit a Square peg in a Round hole! (cracking up!)
Da Da Dun!

The whole trip we would ask relatives if they wanted to hear Grandma's Joke! She would laugh and say very frankly "What Joke?"

So apparently Utah'ens don't know the Cupid Shuffle! When the song came on at the reception everyone looked confused so I guess I kinda, sorta HAD TO show them how to get it done ;)
